• 2 tablespoons flaxseed meal

• 4 tablespoons water

• 1/2 cup clarified butter

• 1/3 cup molasses 

• 1/2 cup raw sugar 

• 1/2 cup coconut sugar

• 1/2 cup stevia 

• 2 free range eggs

• 2 cups wholemeal flour

• 1 teaspoon baking soda

• 1/2 teaspoon nutmeg

• 3 cm fresh grated ginger (or 1 teaspoon powdered)

• 1/2 teaspoon himalayan salt

• 3 tablespoons brewers yeast

• 2 medium peeled, grated carrots

• 12 fenugreek tablets

• 3 cups steel cut oats (or rolled)

• 1/4 cup chia seeds

• 1/4 cup sultanas (optional)

 

Preheat oven to 350.

Combine the flax seed and water in a small bowl and set aside for 3-5 minutes.

Cream butter, sugars, stevia and molasses together.

Add eggs one at a time and mix well.

Mix in flaxseed meal.

In separate bowl, sift together flour, salt, spices and baking soda. Open 12 fenugreek capsules into the mixture and sift together.

Add in brewers yeast.

Add in grated carrot

Add dry mix to the wet sugar mixture. Mix .

Add in oats and mix.

Add in chia seeds and sultanas.

Spoon onto a baking tray covered with baking paper

Bake for 10 - 15 minutes and remove paper from tray to a wire rack while still warm
